1 tbsp fresh coriander or parsley (chopped)

For Dressing:
1 tbsp olive oil
1 tsp lemon juice
1 tsp honey
1/2 tsp mustard sauce
Salt and pepper to taste

 

Step-By-Step Method

Step 1: In a bowl, mix all marinade ingredients and coat the chicken well. Let it rest for 15 minutes

Step 2: Heat a grill pan or tawa and cook the marinated chicken on medium heat for 5–6 minutes per side or until golden and cooked through

Step 3: Once grilled, let the chicken rest for 5 minutes, then slice into strips

Step 4: In a large bowl, combine all salad base ingredients

Step 5: In a small bowl, whisk together all dressing ingredients

Step 6: Add grilled chicken to the salad, pour the dressing over, and toss gently

Step 7: Serve immediately or chill for 10 minutes for extra freshness
