INGREDIENTS

For the crust:
1 and 1/4 cups all-purpose flour
1/2 cup cold butter (cubed)
2 to 3 tbsp cold water
1/2 tsp salt

For the filling:
4 large eggs
3/4 cup milk or cream
1/2 cup grated cheese (cheddar, mozzarella, or a mix)
1/2 cup bell peppers (chopped)
1/2 cup onions (finely chopped)
1/2 cup spinach (chopped)
1/4 cup mushrooms (sliced)
Salt and pepper to taste
1/2 tsp mixed herbs or Italian seasoning

STEP-BY-STEP METHOD

Step 1: In a bowl, combine flour, salt, and cold butter cubes. Rub the butter into the flour using fingertips until it resembles coarse crumbs

Step 2: Add cold water gradually and knead into a soft dough. Wrap and chill in the refrigerator for 20 minutes

Step 3: Roll the dough and place it in a greased quiche pan. Trim the edges and prick the base with a fork. Pre-bake the crust at 180°C (350°F) for 10 minutes

Step 4: In a separate bowl, whisk together eggs, milk or cream, salt, pepper, and herbs

Step 5: Spread chopped vegetables evenly on the crust. Sprinkle cheese over them

Step 6: Pour the egg mixture gently over the vegetables and cheese

Step 7: Bake in a preheated oven at 180°C (350°F) for 35–40 minutes or until the quiche is set and the top is golden

Step 8: Let it cool slightly before slicing and serving

MANISH TIP: To save time, use ready-made pie crust and sauté the veggies slightly before baking to enhance flavor and reduce moisture
