Step-by-Step Method:
1. Prepare
the Eggs:
Crack the eggs into a bowl, add a pinch of salt, and beat lightly. Set aside.
2. Sauté
Aromatics:
Heat oil/ghee in a pan. Add chopped onions and sauté till golden.
3. Add
Spices & Tomatoes:
Add green chilies and ginger-garlic paste. Sauté for a minute. Add turmeric,
red chili powder, and tomatoes. Cook until tomatoes soften and the mixture
becomes thick.
4. Scramble
the Eggs:
Lower the heat. Pour in the beaten eggs. Let them sit for 30 seconds, then
slowly scramble with the spatula. Keep mixing until eggs are cooked but still
soft.
5. Finish
& Serve:
Sprinkle garam masala (if using) and chopped coriander. Mix and serve hot with
pav, roti, or toast.

For a softer texture, don’t overcook the eggs. You can also add a splash of
