Ingredients:

·        4 eggs

·        2 tsp oil or ghee

·        1 medium onion, finely chopped

·        1 medium tomato, chopped

·        2 green chilies, finely chopped (adjust to taste)

·        ½ tsp ginger-garlic paste

·        ¼ tsp turmeric powder

·        ½ tsp red chili powder

·        Salt to taste

·        2 tbsp coriander leaves, finely chopped

·        Optional: ¼ tsp garam masala for added flavor

Step-by-Step Method:

1.     Prepare the Eggs:
Crack the eggs into a bowl, add a pinch of salt, and beat lightly. Set aside.

2.     Sauté Aromatics:
Heat oil/ghee in a pan. Add chopped onions and sauté till golden.

3.     Add Spices & Tomatoes:
Add green chilies and ginger-garlic paste. Sauté for a minute. Add turmeric, red chili powder, and tomatoes. Cook until tomatoes soften and the mixture becomes thick.

4.     Scramble the Eggs:
Lower the heat. Pour in the beaten eggs. Let them sit for 30 seconds, then slowly scramble with the spatula. Keep mixing until eggs are cooked but still soft.

5.     Finish & Serve:
Sprinkle garam masala (if using) and chopped coriander. Mix and serve hot with pav, roti, or toast.

 Manish Tip:

For a softer texture, don’t overcook the eggs. You can also add a splash of milk while beating the eggs for extra fluffiness.
