Ingredients:

For Dough:

·        2 cups whole wheat flour

·        Water as needed (about ¾ cup)

·        1 tsp salt

·        1 tsp oil (optional)

For Potato Stuffing (Aloo):

·        3 medium potatoes (boiled & mashed)

·        1 green chili (finely chopped)

·        1 tsp grated ginger

·        ½ tsp cumin seeds

·        ½ tsp garam masala

·        ½ tsp red chili powder

·        2 tbsp chopped coriander leaves

·        Salt to taste

For Cooking:

·        Ghee or oil for roasting

 

Step-by-Step Method:

Step 1: Prepare Dough

1.     In a large bowl, mix flour and salt. Gradually add water and knead into a soft dough.

2.     Cover and set aside for 20 minutes.

Step 2: Make the Stuffing

1.     In a bowl, combine all stuffing ingredients. Mix well to form a uniform filling.

Step 3: Assemble Paratha

1.     Divide dough and stuffing into equal portions.

2.     Roll one dough ball into a small disc. Place stuffing in the center.

3.     Seal the edges to form a ball again. Flatten and gently roll into a thick paratha.

Step 4: Cook Paratha

1.     Heat a tawa or skillet. Place the paratha and cook on medium heat.

2.     Flip when brown spots appear. Apply ghee or oil on both sides and cook until golden and crisp.

 

 Manish Tip:

Don’t overfill or underfill the stuffing. For evenly rolled parathas without tearing, keep the stuffing dry and mashed well.
