Ingredients:

·        3 large eggs

·        1 small onion, finely chopped

·        1 small tomato, finely chopped

·        1 green chili, finely chopped (optional)

·        2 tbsp coriander leaves, chopped

·        1–2 tbsp milk or water (for fluffiness)

·        ¼ tsp turmeric powder

·        ½ tsp red chili powder

·        ½ tsp garam masala

·        Salt to taste

·        1 tbsp oil or butter for frying

 

 Step-by-Step Method:

1.     Whisk the Eggs:
In a bowl, break the eggs and whisk them until light and frothy. Add milk or water for extra fluffiness.

2.     Add Masala & Veggies:
Mix in chopped onion, tomato, green chili, coriander leaves, turmeric, red chili powder, garam masala, and salt.

3.     Heat the Pan:
Heat oil or butter in a non-stick pan over medium heat.

4.     Cook the Omelette:
Pour the egg mixture into the pan and spread it evenly. Cook for 2–3 minutes until the bottom is golden brown.

5.     Flip and Finish:
Carefully flip and cook the other side for another minute. Serve hot with toast, buttered bread, or paratha.

 

 Manish Tip:

For a richer flavor, add a pinch of black pepper and use ghee or butter instead of oil. You can also add grated cheese for a fusion twist.
