Ingredients

For the Marinade:

·        250g paneer (cut into 1.5-inch cubes)

·        ½ cup thick yogurt (hung curd or Greek yogurt)

·        1 tbsp ginger-garlic paste

·        1 tbsp lemon juice

·        1 tsp turmeric powder

·        1 tsp red chili powder

·        1 tsp cumin powder

·        1 tsp garam masala

·        1 tbsp mustard oil (or vegetable oil)

·        Salt to taste

For Skewering:

·        1 onion (cut into cubes)

·        1 capsicum (green/red, cubed)

·        1 tomato (cubed, optional)

·        Oil or ghee (for basting)

·        Skewers (wooden or metal)

 

 Step-by-Step Instructions

1.     Prepare Marinade:
In a large bowl, mix yogurt, lemon juice, ginger-garlic paste, all spices, and oil into a smooth paste.

2.     Marinate Paneer & Veggies:
Add paneer cubes, onion, and capsicum. Toss gently to coat well. Cover and refrigerate for at least 1 hour.

3.     Assemble Skewers:
Thread marinated paneer and veggies alternately on skewers.

4.     Preheat Grill or Oven:
Preheat grill/oven to 220°C (430°F). Grease the grill or line a tray with foil and place a wire rack over it.

5.     Grill:
Grill skewers for 15–20 minutes, turning occasionally. Baste with oil or ghee for extra char and flavor.

6.     Serve Hot:
Garnish with chaat masala, lemon juice, and mint chutney.

 Pro Tip:

Soak wooden skewers in water for 30 minutes before grilling to avoid burning. For an extra smoky touch, place hot coal in a bowl, drizzle with ghee, and cover the skewers for 2–3 minutes.
