Ingredients

For the Veggie Skewers:

·        1 zucchini, sliced

·        1 red bell pepper, cut into 1-inch pieces

·        1 yellow bell pepper, cut into 1-inch pieces

·        1 red onion, cut into chunks

·        8–10 cherry tomatoes

·        1 cup button mushrooms, whole or halved

·        Wooden or metal skewers

For the Marinade:

·        3 tbsp olive oil

·        1 tbsp lemon juice

·        2 garlic cloves, minced

·        1 tsp dried oregano

·        1 tsp paprika

·        Salt and pepper to taste


 Step-by-Step Instructions

1.     Prepare the Vegetables:
Wash and chop all vegetables into uniform, bite-sized pieces.

2.     Make the Marinade:
In a bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.

3.     Marinate the Veggies:
Toss the vegetables in the marinade and let them sit for 15–30 minutes to absorb flavor.

4.     Assemble the Kabobs:
Thread the marinated vegetables alternately onto skewers.

5.     Grill the Kabobs:
Preheat your grill or grill pan over medium heat. Place the kabobs on the grill and cook for about 10–15 minutes, turning occasionally, until slightly charred and tender.

6.     Serve & Enjoy:
Serve warm with a dip, over rice, or alongside grilled meats.
